Ingredient
Coconut Layer
- 1 teaspoon pure vanilla extract
- 2 tablespoons thick thick coconut milk
- 1 and 1/3 cup of unsweetened finely grated coconut
- 2 tablespoons of pure maple syrup
- 1/4 cup of coconut oil is melted and cooled
Chocolate Coating
- 1 teaspoon pure vanilla extract
- 1 and 1/2 cup Enjoy Life of chunks of dark chocolate or a brand-free choice of milk
- 1/4 cup of coconut oil
- 1/4 cup + 2 tablespoons thick thick coconut milk
Chocolate Drizzle Top
- 1/4 cup Enjoy Alive Chocolate Chips
- 1/2 teaspoon coconut oil
Instructions
- Cover an 8 x 8 inch baking sheet or plate with parchment paper with some overlapping sides
- Make a layer of chocolate first: In a small pan on very low heat, melt the dark pieces and coconut oil while stirring constantly. Stir in coconut milk and remove from the heat, then stir in vanilla.
- Spread the chocolate mixture on a parchment-lined plate using a spatula to scrape every drop. Cool it in the freezer when you make a layer of coconut.
- To make a layer of coconut, mix all the ingredients together in a medium bowl until they are fully combined, then prepare a chocolate drizzle top by melting chocolate chips and coconut oil over very low heat while stirring.
- Sprinkle a layer of coconut evenly over the thickening layer of chocolate (it cannot be completely arranged or the two layers will separate when it is cold) and then drizzle the melted chocolate / coconut oil on it. Put it in the freezer for 10 minutes to set and then cut the box to serve!
- Store leftovers in the freezer or refrigerator. The freezer will provide more candy bar consistency while the refrigerator will make it more like a fudge.
