Low Carb Broccoli Cheese Soup Keto Recipe |
Broccoli cheese soup is my favorite, and it's really easy to make low carb. I feel like broccoli neutralizes all the cheese, making it healthy but super fast and soft.
Ingredient
- 3 cups of grated cheddar cheese (a little extra for toppings if you want)
- 1 tablespoon minced garlic
- 4 cups of broccoli (cut into florets)
- 3 1/2 cups of chicken broth (or vegetable broth)
- 1 cup of heavy whipped cream
Instructions
- In a large saucepan over medium heat, saute garlic for about 1 minute or until fragrant (you can add a little butter if you want).
- Add chicken stock, thick cream, and broccoli florets. Bring to a boil, then reduce the heat to 10-20 minutes or until broccoli is tender.
- Add grated cheese gradually (1/2 cup at a time) and keep stirring until it melts before adding more. Continue until all the cheese is gone. Be sure to keep the heat boiling and avoid high heat.
- Remove from the heat after all the cheese has melted, and enjoy immediately.
- Store leftovers in the refrigerator for up to 5 days, or freeze later.
